The James Miller Room
The James Miller Room offers an intimate, elegant dining experience and is named after the Scottish architect who designed Turnberry Resort. Here, the emphasis is on locally sourced ingredients, prepared and presented with a tireless dedication to craft. The restaurant obtained a three star Sustainability Champion status in 2013 for its sourcing, society and environmental efforts. The room itself is a subtle blend of contemporary design and original features; a highly crafted ceiling and grand fireplace paired playfully with deep red chairs and dark wood. On the table, crisp white linen and simple table settings keep the focus firmly on the food, rich in colour, full of flavour.

Belief in our produce is our main objective when creating our dishes. Focusing on flavour, texture, mouth feel and then presentation is what we strive for when connecting with our guests. The James Miller Room follows a policy on sourcing fish sustainably. Shellfish is line farmed or crail caught, scallops are hand dived and wild fish is caught locally or caught from certified fisheries.
